Welcome to Outdoors with Geoff! Come with me on a journey as make the Brats and Smash Burgers for the Big Game on the @Char-Griller Flat Iron Premium!
I started by portioning my Angus 85/15 Ground Beef into 5 ounce portions and seasoning them with the items listed below.
•Swine Life Mississippi Grind Rub
•Fiesta Brands Garlic Pepper Seasoning
I also let the brats come up to room temperature which is key for a successful griddle cook and to not loose the juices. I cut up one onion and some shiitake mushrooms for the burgers as well.
I started by turning the left three burners on low and placing my cooling rack on the right hand side of the griddle and oiled the griddle with Avocado Oil. The griddle was reading about 285 degrees in the hot spots so I put the brats on and kept them on low the entire cook. I also cooked my onions and mushrooms at this time as well. I flipped them after about six minutes and cooked them on the other side for the same amount of time. I then stood them up against the side of the griddle to cook the bottom. Afterward, I moved the brats to the middle of the griddle, still on low, and cooked them under the dome for about three minutes and then flipping them again. At this point they had reached an internal of 165 degrees and had some great color and I moved them to the cool zone.
I then added more oil and turned two burners to high to preheat for my Smash Burgers. During the wait, I put some oil on the buns to get them ready to toast them. Once the griddle was temping about 475 degrees, I put on the burgers and let them cook for a minute and then I smashed them, waited another minute or two while the cooked and flipped them. They had a nice color and at this point I put my buns down and added cheese to the burgers. I put the burgers under the dome for about 90 seconds to melt the cheese and the cook was finished. I topped my burgers with the onions, mushrooms, mayo and Sweet Hot Mambo Sauce. I topped the Brats with Pico De Gallo and Hellmans Creamy Sriracha Sauce.
This was a great tasting fast cook that anyone can do and it can feed a crowd very efficiently! You won't be disappointed.
