Cheddar Bay Biscuit Chicken Pot Pie/Cozy Casseroles

Join me as I make a casserole that’s perfect for a cold day here in Western Pa…an easy chicken pot pie topped with the always delicious Red Lobster cheddar bay biscuits & garlic butter. Bring on cozy season! #cozycasseroles #easyrecipe #cooking
Ingredients
2 cups shredded rotisserie chicken
1 can cream of chicken soup
1 cup sour cream
1 bag frozen vegetables, steamed in the microwave
1 can diced new potatoes (optional)
Any seasonings you want..I used garlic powder, onion powder, Tony Cacherie's Cajun seasoning, salt & pepper and measured with my heart.
1 box Red Lobster cheddar bay biscuit mix
3/4 cup cold water
1/2 cup shredded cheddar cheese
1/4 cup butter, melted
Directions
1. Preheat oven to 350 degrees.
2. Grease a 9x13 inch casserole dish.
3. In a bowl combine chicken, cream of chicken soup, sour cream, vegetables, potatoes & seasonings. Mix well.
4. Add chicken mixture to the casserole dish.
5. In a smaller bowl add your biscuit mix, water & cheese. Combine but do not over mix.
Set the packet of garlic seasoning aside. You'll use this to make the garlic butter as a topping.
6. Spoon the biscuit mixture on top of the chicken mix.
7. Bake at 350 degrees for about 40-45 minutes. I put mine in for 30 mins but then added 13 minutes to it to brown the top.
8. Melt 1/4 cups butter in a microwave safe bowl then mix in the packet of garlic seasoning.
9. Once the casserole is done brush or spoon the melted butter over the biscuits. Let it cool down a little. Enjoy!!!
