Whether you adore arugula or are iffy on my favorite leafy green I promise you will love this recipe. The olive oil and lemon helps round out any potential bitterness, and the richness of steak turns the peppery flavor into an asset. Here’s the recipe for:
1. Generously season 1-2 steaks with salt and pepper, and cook them over an open fire or in a cast iron until they reach 125~130 internal. Set them aside.
2. Mix together 2 tbsp of olive oil, half a lemons worth of lemon juice, one minced clove of garlic, salt, pepper, chili flakes and lemon zest.
3. Combine your dressing with your greens, and then add one sliced avocado and 2-3 tbsp of Parmesan and mix again.
4. Slice up your rested steak, and enjoy!
