Creamy Pumpkin Bean Soup (Vegan & Dairy‑Free) | Cozy Recipe (serves 4)

Ingredients (for 4 servings):
Pumpkin - 400-500 g
Potatoes - 3-4 medium
Carrots - 2 medium or 4 small
Canned beans - 1 can (400-420 g)
Coconut cream - 180-200 ml
Onions - 4 small
Garlic - 3-4 cloves
Italian herbs

For serving:
Olive oil
Seeds (flax, sesame, pumpkin seeds)
Vegan cheese (Mozzarella or Parmesan‑style are great options)
Croutons
Fresh herbs for garnish

Preparation:
1. Peel the onions and garlic, then chop finely.
2. Place them in a pot and sauté in olive oil.
3. While the onion and garlic are cooking, peel the carrots and potatoes, cut into large cubes. (The pumpkin is already peeled and frozen.)
4. Add all the vegetables to the pot, pour in water so it covers them by about 1.5 cm. Add Italian herbs and salt. Meanwhile, you can prepare croutons from bread (bread + smoked paprika + olive oil).
5. Once the vegetables are tender, blend everything thoroughly with a blender. Add the beans and coconut cream. Return to the heat until it just begins to boil.
6. For serving, pour the soup into a bowl, add vegan cheese, olive oil, sprinkle with seeds, and top with croutons (or serve them separately so they stay crunchy). Garnish with fresh herbs.
