Ingredients 配料 :
1kg Kway teow 1公斤 粿条
500g Yellow noodles 500g 黄面
100g Bean sprouts 100克 豆芽
1 packet Fishball 1包 鱼圆
2 Fish cakes, sliced 2个 鱼饼, 切片
2 Spring onion, cubes 2条 青葱, 切丁
2 Small red chill, diced 2条 小辣椒, 切粒
10g Preserved vegetables, minced 100克 冬菜
Soup 汤 :
2500ml water 2500毫升 水
1 Big pork bone (blanched) 1个 猪大骨 (川燙)
Pork skin (blanched) 猪皮 (川燙)
60g Soybean 60克 黄豆
40g Ikan bilis 40克 江鱼
1 teaspoon Salt 1茶匙 盐
½ teaspoon Pepper ½茶匙 胡椒粉
1 tablespoon Fish sauce 1汤匙 鱼露
Minced Pork 肉脞 :
200g Minced pork 200克 肉碎
2 Garlic, minced 2粒 蒜头, 切碎
1 teaspoon Fish sauce 1茶匙 鱼露
¼ teaspoon Pepper ¼茶匙 胡椒粉
1 tablespoon Water 1汤匙 水
Shallot Oil 葱头油 :
5 Small red onion, sliced 5粒 小葱头, 切片
Pork Lard 猪油渣 :
500g Fatty pork 500克 肥猪肉
Dry Kway Teow Mee Seasonings 干粿条面 调味料 :
½ tablespoon Oyster sauce ½汤匙 蚝油
1 teaspoon Shallot oil 1茶匙 葱头油
1 tablespoon Crispy prawn chilli 1汤匙 虾米辣
1 teaspoon Light soy sauce 1茶匙 酱青
