Welcome back to my channel. In today’s video I’ll be showing you how to make Patey Bannan. Patey Bannan is a flaky buttery pastry filled with ripe plantains. This pastry is prepared in the island of Dominica.
INGREDIENTS: (PASTRY)
3 cups all purpose flour (sifted)
4 oz butter (European butter)
4 oz lard or shortening
3/4 - 1 cup ice cold water
1 tbsp sugar
INGREDIENTS: other
2 ripe plantains (Boiled)
1/2 cup brown sugar
1 tbsp cinnamon
2 egg yolks
1 tsp water
Boil plantains in 4-6 cups of water for 10-15 minutes or until soft and allow to cool. Once cooled slice horizontally into 1/4 inch slices and place to a side.
In large bowl sift flour and add sugar. Add butter and lard to bowl and using a pastry blender mix butter into flour mixture. Mix until a coarse breadcrumbs texture is achieved. Gradually add in water until dough comes together. Roll dough into a square, wrap in plastic wrap and place in fridge for 20-30 minutes.
Remove dough from fridge, roll and section. Place plantain slice in middle of dough, add sugar, cinnamon powder and seal with egg wash. Place pastry seam side down on baking tray. Place into fridge for 10 minutes. Preheat oven to 350 • and bake for 20-30 or until golden brown.
