🥦 First up: Broccoli Paneer Rice – a creamy, garlicky broccoli-paneer blend tossed with vibrant bell peppers and corn. Light, wholesome, and irresistibly tasty!
🌿 Then: Palak Chickpea Masala – hearty chickpeas cooked with spinach and aromatic spices, finished with a squeeze of lemon. Perfect with soft rotis!

📋 Broccoli Paneer Rice
Ingredients:
• Broccoli – 1 small
• Garlic – 3-4 juliennes
• Paneer – 100 gm
• Salt – to taste
• Mixed bell peppers/capsicum – 1 cup (chopped)
• Boiled sweet corn – 1/2 cup
• Red chilli flakes – 1 tsp
• Oregano – 1 tsp
Method:
1. Boil or steam the broccoli.
2. Once cooled, blend broccoli with garlic juliennes, paneer, and 1/2 cup water into a smooth paste.
3. In a kadhai, heat oil and sauté bell peppers and corn for 2-3 minutes.
4. Add the broccoli paste, red chilli flakes, oregano, and adjust salt.
5. Cook for 4-5 minutes until the gravy thickens.
6. Serve with herbed rice or plain rice.

📋 Palak Chickpea Masala
Ingredients:
• Boiled chickpeas – 2 cups
• Chopped spinach – 1 cup
• Tomato purée – 2 small tomatoes
• Garlic – 3-4 cloves (finely chopped)
• Ginger – 1 inch piece (finely chopped)
• Salt – to taste
• Red chilli powder – 1/2 tsp
• Sambhar masala – 1 tbsp
• Oil – to cook
• Garam masala and lemon juice – to garnish
• Reserved chickpea water – 1/3 cup
Method:
1. Heat oil, sauté garlic and ginger until raw smell disappears.
2. Add tomato purée, red chilli powder, sambhar masala, and salt. Cook till oil releases.
3. Add chopped spinach, mix, and cook for 2 minutes.
4. Add boiled chickpeas and reserved chickpea water.
5. Cover and cook until gravy thickens to your liking.
6. Finish with garam masala and lemon juice. Serve with roti or paratha.
