454 grams cane sugar
113 grams salted butter (room temperature)
2 cups heavy whipping cream (room temperature)
Chewy Caramel Candies
170 grams cane sugar
57 grams salted butter (room temperature)
1/4 cup heavy whipping cream (room temperature)
Caramel Hard Candy
454 grams cane sugar
57 grams salted butter (room temperature)
1/4 cup heavy whipping cream (room temperature)
🧈 Tips
• Use a high heat spatula so it doesn't warp or melt.
• Make sure you are using a sweet cream butter with ~80% butterfat. Stay away from European butters with higher butterfat content as those will cause the caramel to burn (and it won't even be your fault!). I always use Organic Valley, but Horizon, O Organics, the Costco Kirkland Organic Salted Butter all work too!
