Sweet Onion Pudding
Ingredients:
2 cups whipping cream
1 (3 oz.) package Shredded Parmesan Cheese
6 Large eggs - lightly beaten
3 tablespoons all-purpose flour
2 tablespoons sugar **
2 teaspoon baking powder
1 teaspoon salt
½ cup butter
6 medium sweet onions or Vidalia onions - thinly sliced
Instruction:
Preheat oven to 350F
Stir together first three ingredients in a large bowl.
Combine flour and next three ingredients. Gradually stir dry ingredients into egg mixture. Set
aside.
Melt butter in a large skillet over medium heat, add onions. Cook, stirring often for 30 to 40
minutes or until caramel colored. Remove from heat and let cool.
Stir cooled onions into egg mixture and spoon into a lightly greased 9 x 13 baking dish. Bake at
350°F for 30-40 minutes or until set.
**If you do not like a sweet taste, eliminate the sugar and replace with ½-1 cup Cheddar
