Ahmedabad abd Savik Food Festival has kicked off, celebrating the culinary traditions of India's north and northeast regions. Running until the end of the month at Sola Bhagwat Vidyapith, the festival was inaugurated on Saturday morning in the presence of grassroots innovators and dignitaries. This year, the festival boasts 70 stalls offering around 400 traditional and innovative dishes, with each stall required to feature at least two items made from light grains. Organizers have emphasized the use of traditional recipes, prohibiting preservatives, maida, cheese, paneer, and soda. The spotlight is on Jammu & Kashmir, Himachal Pradesh, Nagaland and Mizoram, with several farmers participating in the event. The festival saw a large turnout on its opening day. In a bid to minimize waste, visitors were encouraged to bring their own water, and stalls were urged to serve food on steel plates. The event also includes a millet exhibition and cultural performances. Among the innovative dishes on offer are umbadiyu, Dangi thali, ragi malpua, millet dahi vada, millet frankie, panki, Surati undhiyu, ragi gulab jamun and water chestnut chaat
