Learn how to make "Accras de morue". These delicious Salt cod fritters are a classic in the French West Indies (French Antilles). I'll show you how to make the sauce in the next video.
Ingredients for 40 small fritters
400g -- 0.9 lb of desalted cod. You can also use fresh cod.
2 small spring onions
1 small onion
1 handful of parsley
1 mild chili pepper (optional)
1 clove of garlic
300g -- 2 ½ cup of all purpose flour
1 teaspoon baking soda
1 tablespoon of lemon or lime juice
280 ml -- 1 cup + 3 tbsp of water (you might need more or less depending on your flour)
Salt and pepper
Oil for deep frying (peanut oil, canola oil,…)
To desalt the cod. Immerse it in a large bowl of water and put it in the fridge.
Leave it there for 24 hours changing the water 4 times in that time period.
