This week are sharing the Recipe for the most delicious Mauritian dessert. NAPOLITAINES is made from 2 Butter cookies with a layer of red Jam in the middle and glazed with coconut infused Icing, so yummy!

FIND HERE THE RECIPE FOR…
NAPOLITAINES
Prep time: 1h
Baking time: 12min.
Wait time: 5 to 12 hours
Ingredients for 30 Napolitaines:
227g Unsalted butter
505g Cake flour
1 tbsp Vanilla extract
1 Vanilla bean
20ml cold Water
3g Baking powder
5g Salt
20 tsp of your favorite Strawberry Jam
Sprinkles (optional)
Ingredients for Icing:
410g Icing sugar
100ml cold Water
1 tsp Coconut extract
1 tsp Glycerin
1 drop of Food coloring
Equipment and Tools:
Stand- Up mixer (or by hand)
Rolling pin
4-5cm Cookie cutter
2 baking sheets
Cooling rack
Small knife
Small Spatula
Instructions:
1. Start by scraping the vanilla pearls out of the bean.
2. In the stand-up mixer, combine the butter, vanilla pearls and vanilla extract and let mix. Add the Salt and let mix.
3. Then add half of the flour, mix, then add the second half. Keep a spoon aside for later.
4. Chef Sha’s Top Tip: While mixing add the Water and baking powder to achieve a puffy and light biscuit.
5. As the dough is quite brittle, remove it from the bowl and kneed it by hand into a nice dough ball. Wrap it in plastic wrap and place it into the fridge for at least 15min.
6. Roll out the dough and cut out 1cm thick round shapes following video instructions. You should have 60 separate cookies.
7. Pre-heat the oven at 350° Fahrenheit and bake the cookies for 12 minutes until they are lightly browned.
8. Transfer the Cookies onto a cooling rack and let them cool down completely.
9. Apply the Strawberry Jam (ours is a homemade Strawberry/Lime Jam- find the link above) with a spatula onto both sides of the cookie, ensuring that one side is more dried than the other and then stick them together, making sure they are well oriented. Let dry and stick together.
10. For the Icing, combine the Icing sugar, Coconut extract, Glycerin, Food coloring and half of the water and mix. Ensure to gradually add the Water to reach a flowing yet not too runny consistency.
11. Apply the Icing onto the Cookies following video instructions. If you’d like, decorate with Sprinkles when semi-dry. Let them dry at least 5 hours and store them in an airtight container. VOILÀ!! ENJOY!!
