I Turned My Dad's Crazy Childhood Story Into Dessert

Every year for my dad’s birthday, I design a dessert inspired by one of his wild childhood stories.
This year’s scene brings to life the first time he ever boarded a plane. It was a beat-up WWII cargo aircraft, packed mostly with animals, flying him back to boarding school. The runway was a cliff. The takeoff? Questionable at best. But the story? A classic.
To match the setting and his roots, I drew from tropical and Honduran-forward flavors—bright, textural, and memory-soaked.
Here, he narrates the story himself, while I translate it into three desserts built for whimsy and wonder:
🍍 Pastureland Tart
Pineapple lemon curd, mascarpone and Honduran crema topping, cake "grass," and a crumble of panela, cardamom, toasted coconut, and feuilletine
🛩️ Cargo Plane Cookie
Citrus cardamom sandwich cookie with a guava ganache center
🌿 Jungle Tart
Caramelized plantain filling, lime namelaka, toasted cardamom lime Italian meringue, a gelée "river," and citrus cardamom cookie leaves finished with royal icing
These aren’t just desserts. They’re edible storyworlds, designed to hold memory and meaning.
