Ingredients
1 Eggplant 茄子
100g Vegan minced meat 素肉碎
2 Garlics 蒜頭
3 Green onions 葱
1 Shallot 紅葱頭
1 tbsp Chinese cooking wine 料理酒
1 tbsp Toban chili sauce 豆瓣醬
調味汁:
1 tsp Soy sauce 生抽
1 tsp Dark soy sauce 老抽
½ tsp Sugar 糖
1 tbsp Vegan Oyster sauce 素蠔油

Instructions
1. Chop Eggplant, steam on high heat for 8-10mins.
2. Mince garlic, mince green onions, slice shallot.
3. Sauce: soy sauce, dark soy sauce, oyster sauces, sugar
4. Add oil, medium small heat, stir fry green onions, garlic and shallot till brown.
5. Add to ban chili sauce , stir fry for 1 min.
6. High heat, add vegan minced meat, stir fry for 2 mins.
7. Add Chinese cooking wine, fry for 1 min.
8. Add 350ml water, cook for 3 mins.
9. Add sause and eggplant, stir fry till sauce is reduced, done.

素魚香茄子 步驟:
1. 茄子切件後立即放入蒸爐,大火蒸八至十分鐘 (蒸至8成熟)
2. 準備配料,蒜頭切碎,紅葱頭切片,葱切碎
3. 素肉碎不用醃,準備100g份量備用
4. 準備調味汁,生抽 老抽 素蠔油 糖
5. 多倒一點油,中小火爆香葱白、蒜蓉、紅葱頭至金黃
6. 下一湯匙豆瓣醬炒一分鐘
7. 轉大火下肉碎,繼續翻炒1-2分鐘
8. 下一湯匙米酒,略炒1分鐘
9. 加入350ml水, 大火煮3分鐘至入味。
10. 加入茄子快速翻炒至收汁,上碟。
