可可奶油三明治蛋糕
可可戚风蛋糕:
50g 油
20g 可可粉
80g 牛奶
2g 香草精
70克 低筋面粉
5个 蛋黄
5个蛋白
少许柠檬汁
90克糖
50g油加热至50~60C度,筛入20g可可粉拌顺滑。加入80克牛奶,2g香草精拌匀。
筛入70g低筋面粉,拌至湿润,最后加入5个蛋黄拌顺滑。
5个蛋白在无油无水的大碗里,滴入少许柠檬汁。打发出粗泡,慢慢分次加入90g细砂糖,高速继续打至软勾状可以晃动的状态,再改中低速打1分钟,让蛋白糊变细腻稳定。
先将1/3的蛋白糊加入到可可蛋黄糊中,推拌均匀。再将剩余全部蛋白糊加入,翻拌均匀即可。
装入28cm×28cm的烤盘里
140或150C度烤40分钟
原味奶油霜:
45g 软化无盐黄油
30g 糖
100g 淡奶油(鲜奶油)
黄油一定要软化,可以用微波炉加热20秒左右来软化。
加入糖,一起打发至颜色发白,蓬松。
淡奶油一定要加热至35--40C度之间,加入到黄油糖里,打发至混合,程顺滑奶油霜即可。⚠️淡奶油可以分几次加入,打均匀再加下一次,会更容易打均匀。
(如果奶油霜出现油水分离的现象,说明温度太低,把它入微波炉加热5--10秒,继续打顺滑即可)
Cocoa And Buttercream Sandwich Cake
50g oil
20g cocoa powder
80g milk
2g vanilla extract
70g cake flour
5 egg yolks
5 egg whites
A little lemon juice
90g sugar
Heat 50g oil to50-- 60°C, sift in 20g cocoa powder and mix smoothly. Add 80g milk, 2g vanilla extract and mix well. Sift in 70g low-gluten flour, mix until moist, add 5 egg yolks and mix smoothly.
Put 5 egg whites in a large oil-free and water-free bowl, drip a little lemon juice. Make a thick bubble, slowly add 90g of fine sugar in portions, and continue to beat at high speed until it is soft and shaky, and then change to medium and low speed for 1 minutes to make the egg white paste smooth and stable. First add 1/3 of the egg white paste to the cocoa egg yolk paste and mix evenly. Then add all the remaining egg white paste and mix evenly.
Put it in a 28cm×28cm baking dish
Bake at 140 or 150C for 40 minutes
Original cream frosting:
45g softened unsalted butter
30g sugar
100g whipped cream (fresh cream)
The butter must be softened, and it can be softened by heating it in the microwave for about 20 seconds. Add sugar and beat together until the color is whitish and fluffy. The whipped cream must be heated to between 30-40C, add it to the butter sugar, and beat until blended, and the cream is smooth.
⚠️ cream can be added in several times, evenly beaten and then added again, it will be easier to beat evenly.
(If the cream appears to separate oil and water, it means that the temperature is too low. Put it in the microwave and heat it for 5-10 seconds and continue to beat it smoothly)
