Leftover Lamb and Potatoes Hash
Leftover Lamb or any roast meat
Leftover Potatoes or any added vegetable leftovers
Fresh cabbage shredded coarsely
2 small or one large roughly chopped
salt to taste
1-2 tablespoons of sugar
2 tablespoons of canola oil or oil of choice
Coarsely shred 1/3 to a half head of cabbage. Also roughly chop onion and add all to a large fry pan. Cook on low in 2 tablespoons of oil. Fry slowly until golden and soft. Add your leftover meat and vegetables and cook an additional 10 minutes on very low and just until hot.
Serve with your favorite side. I just prefer some pickles and cheese as a side for this.
I do not like to waste food so this is what I make so I feel like I have a new dish from my leftovers. You would be surprised how adding onion and cabbage to leftovers will change your dish and stretch it into two meals instead of just the one.
