****INGREDIENTS****
2 cups (160 grams) Oat Flour
3 medium bananas (330 grams)
2 large eggs
1/2 cup (120 grams) unsweetened apple sauce
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 scoops (60 grams) vanilla protein powder)
1/2 cup (56 grams) chopped walnuts (or your choice nuts)
1/4 teaspoon salt
TOPPING:
Additional crushed walnuts
****DIRECTIONS****
1. Take out a large bowl, peel your bananas and add your bananas into the bowl.
2. Using a fork, mash your bananas until it turns into a puree.
3. In the same bowl, begin adding your wet ingredients which should be the eggs, unsweetened apple sauce, milk, vanilla extract, and date paste/syrup.
4. Mix everything together.
5. Take out another large bowl and begin adding your dry ingredients which should be your oat flour, baking soda, baking powder, ground cinnamon, ground nutmeg, protein powder and salt.
6. Mix everything together.
7. Add 1/2 cup of crushed walnuts or your choice of nuts. This is optional and you can omit if you don’t want any nuts.
8. Slowly add the dry mixture into your wet mixture while stirring. Mix until combined.
9. Take out a muffin tin and line it with muffin liners.
10. Spray them with a bit of non-stick cooking spray and add your mixture. Be careful not to overfill them. Fill them up about 3/4 max.
11. Bake on 350F for 25- 30 minutes.
12. Let them cool for about 10 minutes before removing them.
