Make Pancakes With Assorted Whole Grains

Pancakes don't have to be made from wheat or any particular kind of grain. You can mix in whatever you've got lying around-- oats, buckwheat, rye, barley, corn, even rice or garbanzo beans, etc.
Recipe:
200 grams mixed whole grain flours
200 grams milk (soy, oat, almond, dairy, etc.)
2 eggs
2 tbsp sugar
2 tsp vanilla
1 tbsp baking powder (if you're making the batter the night before, use sourdough starter here instead of baking powder)
1/4 tsp salt
Heat a griddle or pan to 450F (medium-high).
Whisk the baking soda into the flour; set aside.
Add the salt, sugar, vanilla and eggs to the milk, then whisk.
Pour the wet mixture over the flour mixture, then stir just enough to combine. Don't over-stir or beat!
Ladle the batter onto the hot griddle or pan.
When bubbles form, flip the cakes.
Cook all the way through or until golden brown on both sides.
Serve with butter, syrup, powdered sugar, fresh fruit or anything else you want... AND ENJOY!
