Crispy pork belly has always been a winner in my books, in todays recipe its paired with a beautiful honey blossom butternut puree, truffle mash and a really simple light chickpea and French lentil salad. Crispy pork belly, Honey butternut puree, Truffle mash, Chickpea brown lentil salad, and Caramelised figs

Ingredients:
Pork belly
(Marinate)
2 Tbs brown sugar
2 tsp garlic
1/4 cup soy sauce
1 cup water
1/3 cup apple cider vinegar
2 tsp cinnamon
1tsp nutmeg
2tsp Chinese five spice
Butternut puree:
750g butternut squash
1.5g Xantham gum
5g sea salt
2 Tbs unsalted soften butter
2 Tbs honey blossom
1/4 cup coconut oil
Truffle mash:
4 large Sebago potatoes
2 Tbs sour cream
Pinch salt & pepper
100ml truffle oil
50g melted butter
Chickpea & Brown lentil salad:
390g chickpeas (roasted)
390g brown lentils
1 whole red capsicum (diced)
1 medium size onion (diced)
Couple sprigs of parsley (chopped)
Couple sprigs of mint (chopped
100ml truffle oil
60g green olives (diced)
2 anchovies (diced)
Caramelised Figs:
2 figs
10g raw sugar
Garnish:
Fried Parsley leaves
Crispy onions
