This hearty black eyed pea soup is a comforting meal in a bowl.
1lb sausage, I used Jimmy Dean regular sausage
1/2 onion, diced
2 regular size cans of black eyed peas, drained and rinsed
1 box of chicken broth
1 can of diced, fire roasted tomatoes
1 cup of salsa of your choice
1/2 tsp Worcestershire sauce
1/2 tsp garlic salt
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground cumin
Cook sausage and onion in a large stock pot.
Once done, add all spices and stir.
Add Worcestershire sauce and stir.
Add in tomatoes with the juice, salsa and black eyed peas, combining gently.
Finally, pour in chicken broth.
Simmer on medium for 45 - 60 minutes, stirring occasionally.
