Vegan Nachos & Banana Ice Cream with Gary Anthony Williams!!

Actor, comedian and filmmaker (and Ryan's favorite person) Gary Anthony Williams is here! As a longtime vegan, he teaches Ryan how to make delicious "faceless" nachos and guacamole with vegan banana milkshakes. Ryan and Gary LOVE it all but will the girls? Watch and find out!

RECIPE: Vegan Nachos and Vegan Banana Ice Cream

Ingredients:
Nachos:
Tortilla chips
Black or pinto beans (your choice)
1 red and 1 orange bell pepper
white or sweet onion
a ripe tomato
olive oil
a jar of jalapeños (if you want spice)
salsa of your choice
vegan cheese (We like Daiya Shredded Cheddar)
salt
pepper
chili powder blend

Guacamole:
2 ripe avocados
a Lime

Banana Ice Cream / milkshakes:
Frozen bananas
non-dairy milk (coconut, soy, etc.)
Agave sweetener (optional)
Cocoa powder (optional)
Peanut butter (optional)

Directions:
Preheat the oven to 350.

Dice the vegetables- red and orange or yellow peppers, and onions. Set a small amount of onions aside for the guacamole. Heat some olive oil in a saute pan and add the onions and the peppers. Salt and pepper to taste. While the vegetables and onions are cooking / sweating, add half a can of black beans and half a can of pinto beans. (You can do one full can of either if you prefer.) Add a dash of chili powder.

To make the guacamole, add the avocado to a mixing bowl, add the rest of the diced onions, add the juice of one lime, some salt and pepper.

Chop the jalapeños and add some to the guacamole if you like!

On a baking sheet, add layers of nachos, peppers, beans and cheese and put in the oven. As soon as the cheese is melted, remove from oven to cool.

In the meantime, make the banana ice cream. Add all the ingredients- frozen bananas, non-dairy milk, agave sweetener, cocoa powder and peanut butter to a blender and combine. If you prefer a milkshake, add more milk!

Garnish the nachos with jalapeños and guacamole, pour the ice cream into bowls / cups and ENJOY!
