🌽 Elote Pasta Salad (Cold Street Corn Pasta Salad)
Ingredients:
1 box pasta (12–16 oz), I like shells or Ditalini
1 can fire-roasted corn, drained
1/3 cup diced red onion
1/2 cup mayonnaise
1/4 cup sour cream
Juice of 1 lime
1/2 cup crumbled feta cheese
1–2 tsp chili powder or Tajín
Salt & pepper to taste
Optional: chopped fresh cilantro
Instructions:
Cook pasta according to package directions. Rinse under cold water and let cool.
In a large bowl, combine pasta, fire-roasted corn, and red onion.
In a small bowl, mix mayo, sour cream, lime juice, chili powder, salt, and pepper.
Pour dressing over pasta mixture. Stir well.
Fold in feta cheese. Chill 30+ minutes. Garnish with extra chili powder or cilantro if desired.

Easy Baked Beans with Bacon (This serve 4-6.)
Ingredients:
1 large can pork and beans (28 oz)
5 strips bacon, chopped
1/4 cup ketchup
1 tbsp mustard
1/4 cup brown sugar
1/4 tsp garlic powder
1/4 tsp onion powder
2 tbsp Worcestershire
Optional- 1 tsp liquid smoke (or to taste)
Instructions:
Preheat oven to 375. In large bowl, combine beans, mustard, ketchup, brown sugar, seasonings, and Worcestershire. Pour into small baking dish. Slice bacon into small pieces and place on top. Bake 1 hour to hour and a half or until bacon is crispy.


🍦 No-Bake Ice Cream Sandwich Cake
Ingredients (Half Recipe):
12 ice cream sandwiches
1 (8 oz) tub Cool Whip
4 oz chocolate syrup
4 oz caramel sauce
Optional: mini chocolate chips, crushed Oreos, sprinkles, chopped nuts
Instructions:
Layer 6 ice cream sandwiches in the bottom of a freezer safe dish. Spread half of the Cool Whip on top.
Drizzle with chocolate and caramel. Repeat the layers.
Top with more drizzle and any toppings you like.
Freeze 2+ hours or overnight. Slice and serve!
