Curry in a Hurry Ingredients
14 oz can light coconut milk (400g)
28 oz can diced tomatoes with the juice (800g)
2 cups cauliflower florets, cut to bite size (200g)
4 cups additional chopped vegetables of your choice (400g)
2 tbsp red curry paste (30g)
1/2 tsp onion powder (1g)
1/2 tsp garlic powder (1g)
1/4 tsp sea salt (1.5g)
1/4 tsp chili powder (0.5g)
Pepper to taste
1/2 cup red lentils (100g)
2 cups packed kale or spinach (60g)
3 cups cooked grains, brown rice or quinoa (450g)
Cilantro and lime to garnish
Instant Pot Oatmeal Recipe Ingredients
1/2 cup rolled oats
1 tbsp ground flax seed
1/2 tsp cinnamon
1/2 cup water
1/2 cup non-dairy milk, unsweetened
1-3 servings of fruit
1-2 tbsp nuts of choice
Instant Pot Vegetable Bean Soup Recipe Ingredients
1 tbsp olive oil
2 yellow onions, diced
3 celery stalks, chopped
2 medium-sized carrots, chopped
1 cup frozen corn
1 cup frozen peas
1 large russet potato, peeled and diced
1 tsp garlic powder
1 tsp oregano
1 tsp basil
1 tsp thyme
1/2 tsp marjoram
1/2 tsp each salt and pepper
1 (796mL) can diced tomatoes
6 cups vegetable, chicken or beef broth
1 cup green beans, trimmed
1 can kidney beans, rinsed and drained
