In this episode of after work life, I try to spent my night doing things that makes my heart happy. Cooking quick and simple dinners to save time for things I enjoy while relaxing. I don’t take pressure to do hobbies with perfection as it is for relieving stress not for creating stress.

Dinner Recipes-
1. Stewed butter beans
Ingredients- butter beans soaked and boiled, ghee, onion, garlic, cherry tomatoes, spinach, lemon juice, salt, pepper, and red chili flakes.
Directions- In a pan add ghee with chopped garlic and onion. Sauté till onion is translucent, then add chopped cherry tomatoes and blanched spinach. Seasoning with salt and pepper to taste. Garnishing with red chili flakes and lemon juice.
2. Falafel
Ingredients- chickpeas soaked, onion, garlic, carrot, chickpea flour, salt, cumin, and coriander powder.
Directions- Blitz raw soaked chickpeas with carrots, onion, and garlic into a coarse paste. Add salt, cumin, and coriander powder to the mixture. Add chickpea flour slowly and mix till it holds the shape on its own. Make round balls of falafel and fry till golden brown or for 15 minutes(5 minutes of low heat and 10 minutes on high heat while checking it constantly).
3. Shirataki Noodles
Ingredients- Shirataki noodles, cabbage, carrots, ginger, garlic, onion, spring onions, sesame oil, soya sauce, rice vinegar, salt, pepper, and chili oil.
Directions- Add sesame oil to the pan with chopped garlic, ginger, onion, and white part of spring onions. Sauté for a minute and add soya sauce, rice vinegar, salt, and pepper to taste. Add chopped carrots and cabbage. Cook it for 5 minutes and add the noodles. Cook it for another 5 minutes on high heat. Garnish with chili oil and spring onions.
4. Chili crisp tofu
Ingredients- Tofu, chili oil with crisps, soya sauce, salt, and honey. Oil to fry(optional).
Directions- Add chili oil, soya sauce, salt and honey to a bowl for the dressing. Add tofu cubes to it and air fry it for 10 minutes. Alternatively, add oil to a pan and fry the tofu cubes till golden brown. Add the dressing to the pan and cook for 5 minutes until the sauce coats the tofu completely.
