for 10-12 medium-size muffins
✅ yellow cornmeal (fine): 120 g
✅ all-purpose flour: 125 g
✅ baking powder: 3 tsp
✅ fine salt: a pinch
✅ olive oil: 50 g
✅ brown sugar: 67 g
✅ honey: 2 tbsp
✅ egg: one whole
✅ whole milk: 240 ml
Using a mini muffin tray? Bake from start to finish at 180°C / 350°F! Mini muffins are small enough that the higher temperature is not needed at the beginning to get a good dome.
