Oh My, Chocolate Pie!

This dessert combines to great sweets, Chocolate and Pie. It will have you yelling "Oh My that's good!" The smooth creamy chocolate filling, dances across the golden brown flaky butter crust.
Ingredients:
PIE FILLING:
o ¼ cup butter
o 1 ¼ cup granulated sugar
o ¼ teaspoon salt
o 3 eggs
o ¾ cup evaporated milk
o 1 teaspoon vanilla extract
o 3 tablespoons cocoa powder
o ¼ cup chocolate chips
Whipped Cream:
o 1 cup heavy cream
o 2 tablespoons confectioners’ sugar
o ½ teaspoon vanilla
*refer to Pate Brisee video and recipe for pie crust.
Instructions:
1. Prepare pie crust, if making a Pate Brisee short crust. Once crust is ready roll out to about 12 inches. Place over and press into pie pan, form, and trim the edges. Using a fork or knife, poke holes in the bottom of the crust. Chill in the refrigerator for 30 minutes. Add beans or pie weights and blind bake at 375 degrees for 15 minutes. Remove and allow crust to cool.
2. Start by melting butter in the microwave, warm in 20-30 second increments until completely melted. Add chocolate chips and whisk until completely melted. Set aside to cool. In a bowl combine sugar, cocoa powder, eggs, evaporated milk, salt, and vanilla extract. Whisk until smooth. Add in chocolate/butter mixture, whisk until combined. Pour filling into pre beaked pie crust. Bake at 325 degrees, for 50 minutes. Middle should no longer jiggle.
3. To make whipped topping add heavy cream into a mixing bowl. Add confectioners’ sugar and vanilla beat on high until it forms stiff peaks. Add whipped topping into a pipping bag. Pipe whipped topping over the pie, as desired.
