Ontario Cocktail - "Parliament Pop"

We crossed Canada to celebrate the country's 150th birthday by making cocktails that connect ingredients with the land and its memories.

The Parliament Pop is our creation to celebrate the province of Ontario.

When I was growing up (in Ontario), I would consume A LOT of cherry coke. What better way to pay homage to the memory than to make an adult-version cherry coke?

We took Ontario's own Dillon's Small Batch Distiller's Cherry gin, made up an epic Kola Syrup (kola nut, clove, vanilla, lavender), Dillon's La Carnita Mole bitters, lime juice, and a bit of soda.

Parliament Pop Recipe:

3 oz. Dillon's Cherry Gin
2/3 oz. Cola Syrup (lemon, orange, lime, nutmeng, cinnamon, ground kola nut, star anise, lavender, citric acid, vanilla bean, turbinado sugar)
1/2 oz Lime juice
3 dashes Dillon's La Carnita Mole Bitters
Top with soda

Garnish with picked cherry and lime wheel
