BBQ PORK FRIED RICE 🌾🍚🍶
3-4 cups (cooked rice), day-old IS BEST!!!
1 cup cooked BBQ Pork, chopped
1 tbsp oil or bacon grease
¼ Onion, yellow or white, diced finely
1 small shallot, diced finely
1 Carrot, diced finely
3 Garlic Cloves, minced
1 Tbsp Butter
2 Eggs
3-4 Scallions (I used handful of fresh chives as well)
1-2 tsp bouillon (chicken or veg)
Soy Sauce (soy sauce to taste) start with about 2-3 Tbsp and work up if needed
In a skillet, add the bacon grease, add onions and carrots, saute for about 3-4 minutes on medium heat. If not using bacon grease add a Tbsp of neutral oil (veg, avocado, sesame etc), then proceed to saute the carrots and onions. After a few minutes add the garlic. If youre using BBQ pork, you want to add that as well.
Next you want to add the day-old rice, smash down a bit, de-clump and toss (don’t mix) with meat, onion, carrot and garlic. Create a well in the center of rice, add the butter, let it melt and then crack two eggs in the middle. Let the eggs set for a minute (add a pinch of salt and pepper to eggs) and then gently scramble eggs. Sprinkle the bouillon to the perimeter of rice and then splash some soy sauce around add scallion and saute for one more minute.
Using a spatula toss everything well to fully incorporate all ingredients. Further remove any clumps and taste, add more soy sauce if needed. Finally add some sesame seeds, optional, and serve.
