Distinct from the translucent, chewy, starch-based Lai Fun often found in Hong Kong-style roast meat restaurants, the authentic Guangzhou Xiguan Lai Fun is made primarily from ground rice flour, resulting in noodles that are milky white, thick, round, and possess a texture that is soft, slightly sticky, and rich in natural rice fragrance.
