I will help you understand what Gain and Offset are along with comparing images taken with HDR or Unity Gain camera settings.

**UPDATE*** 
The author of the blog I reference Jon Minnick left a comment below clarifying the QE value.  
"I just wanted to point out that the Quantum Efficiency value doesn’t really “cap” the top of the bucket or chop off how many electrons it can hold. Instead, the quantum efficiency indicates the rate that the bucket actually catches the incoming rain drops.  If there are 100 incoming raindrops, a camera with a QE of 60% will on average actually catch and count 60 of those 100 raindrops. Whereas a camera with a QE of 85% will on average catch and count 85 of those incoming 100 raindrops."
