One of the salads of my childhood, making it as I remember my mom making it every holiday, no New Years went without it 😜 I chose to make this salad today because we had too many boiled eggs from Easter.
First I washed and boiled some potatoes (4 large potatoes used) with a little bit of salt added to the boil,its important not to over cook potatoes so it doesn't turn into mashed 😉 Drained the water and let potatoes cool down before peeling and dicing them,cubed eggs ( I used 9 smaller eggs) and 1 pound bologna. Before you say anything negative about bologna....I dont normally make bologna sandwiches but it's great in this salad, I also had some friends that just couldn't stand bologna but loved the salad and ate it without realizing bologna was in it,you can also replace it with whatever meat you prefer I guess.I then used 1 jar of pickles (24 oz) that I diced, 1 can green peas (drained) .I used half a sweet onion and some green onions. Onions are up to you!Some people pick one or the other ,some use both,some do not like onions at all.Salt and pepper to taste, light mayo and I have always loved fresh dill to decorate that salad with ,I did not have any fresh one this time so I used some dry one that I had.I also know some people like to add carrots to it while other prefer apple, I personally dont add those two.My husband likes to put that salad in a tortilla and eat it as a wrap, there are too many different flavor tortillas that you can experiment with 😋
