Ambur biriyani
500 ml jeerakashala rice wash and soak for 30 minutes
In a pot
Add
3 tbs ghee
3 tbs sunflower oil
3 medium cinnamon
5 cardamom
1 star anise
5 cloves
Saute on low flame then add
2 cup sliced onions
Then add 2 tbs garlic paste
2 tsp ginger paste
Saute until rawness goes
Then add 2 cup chopped tomatoes
Saute really well then add
1/2 tsp turmeric
3 green chilies
Salt needed
Then add Kashmiri chilli paste 3 tbs ( dry roast 12 k chilies and grind to ground me paste
Saute and add
1 kg chicken curry cut
Saute until chicken release water then add lime juice ( juice of 1 lime ) then add
3 tbs curd
1 handful coriander leaves
1 handful mint leaves
1 cup boiling water
Mix well and cover and cook for 10 minutes ( until chicken cooked well)
For the rice
To the boiling water add soaked rice
Add salt , coriander leaves, mint leaves
Half Cook the rice and strain
Then add the hot rice to the chicken pot , ghee Coriander leaves, mint leaves gently mix and again cook for 10 minutes (after sealing the pot )on low flame
