~ Lemon and Orange Cake:

-100ml vegetable oil
-200ml nut milk of choice
-270g plain flour
-100g caster sugar
-2 tsp baking powder
-zest of 1 lemon and 1 orange and a little extra for decoration at the end
-juice of ½ lemon and 1 orange

For the icing:
-water and icing sugar enough to make a thick-ish but not too runny mixture
-drizzle of lemon juice
-few drops of yellow food colouring (optional but makes it so pretty!)

1) Preheat the oven to 180 degrees C (Gas mark 4)
2) In a bowl, mix together all the cake ingredients
3) Grease a baking tin or loaf tin and pour in the cake mixture in.
4) Bake for around 35 - 40 mins or until a skewer comes out cleanly and then let it cool down.
5) After its completely cooled down, if you wish to, drizzle the icing on. To do this, mix the icing sugar with a few teaspoons of water until you see it form a nice, not too runny mixture, add in the lemon juice and optional food colouring. Drizzle on top of the cake in whatever way you wish and enjoy!
