Amazing Orange-Creamsicle Cupcakes (Quick & Easy)

ORANGE CREAM CUPCAKES RECIPE:
(Makes 12)
CUPCAKES:
1½ cups flour
1 ½ tsp. baking powder
¼ tsp. salt
2 large eggs, at room temperature
2/3 cup granulated sugar
12 T. unsalted butter (1 ½ cubes) melted
2 tsp. finely grated orange zest
1 tsp. vanilla extract
½ cup milk
Preheat oven to 350 degrees. Line muffin tin with 12 cupcake liners.
Whisk the flour, baking powder and salt in a medium bowl. Beat the eggs in mixer on medium high speed until pale and fluffy.
Reduce speed to medium low and beat in the melted butter, orange zest and vanilla. Beat in the flour mixture in 2-3 additions, alternating with the milk, beginning and ending with the flour mixture, just until combined (do not over mix).
Divide the batter evenly among cupcake liners, about ¾ full. Bake until toothpick comes out clean, about 18 minutes. Cool 5 minutes and then remove cupcakes to rack to cool completely.
FROSTING:
Bring orange juice to boil in a small saucepan; reduce the heat and simmer until reduced to 1 ½ T, about 8 minutes. Let cool. Beat the cream and cheese and butter on medium high in mixer until smooth and fluffy.
With mixer on low, slowly add the powdered sugar and beat until light and fluffy. Add the vanilla, the orange syrup, orange zest and food coloring (1 drop red; 3 drops yellow) and beat on medium speed until thoroughly combined.
Refrigerate until spreadable (15 min). Spread on cupcakes and add sprinkles or candied orange zest.
Note: These yummy citrus cupcakes taste like an orange creamsicle from by-gone days~!
