Palm Candy is prepared from the extracted sap from the palm. The sap from the palm sapling is extracted skillfully. The sap that oozes from the sapling is collected in earthen pots. The pots are coated with slaked lime to ensure that the sap does not ferment. They make these from between January and May because it is seasonal .
This unfermented juice is a refreshing drink; padaneer is its local name., This is very common in Southern Tamil Nadu. This drink served on palm leaves that are expertly folded into mugs.
The unfermented juice is then go for some process to remove unwanted meterials. This filtered juice is then boiled up to 110 degree celsius.Then this juice is taken and stored in separate boxes for 40 days. The boxes are special and which contains small networks of threads inside it to evolve this juice to candies.
After 40 days this will taken out and extract the candies from it, and some juice which is remaining inside is used to prepare Palm Jaggery. When we taken this juice after 40 days it becomes golden in colour and they wash it,and dried under the sun for long time use.
