My first day in Hue was like stepping back in time to Vietnam’s royal past. I started at the majestic Imperial City, wandering through ancient gates, colorful courtyards, and ornate palaces once reserved for emperors and mandarins. The atmosphere is a mix of history and serenity, with every wall and carving telling stories of Vietnam’s Nguyen dynasty. Hue instantly felt different from the bustling energy of Hanoi or Saigon—it’s calmer, yet deeply cultural.
After exploring the Imperial City, I wanted to dive into Hue’s famous food scene. The highlight was trying Banh Khoai, a crispy turmeric rice pancake stuffed with shrimp, pork, and bean sprouts, then wrapped in rice paper with fresh herbs and dipped in Hue’s signature peanut sauce. It’s crunchy, savory, and perfectly balanced—the kind of dish you’ll crave again the moment you finish. Hue’s food has a royal touch, and this dish is the perfect example.
