✨ Hello foodies 💜Welcome back to my kitchen! Today, I’m showing you how to make Marinated Chicken Biryani – a delicious, easy, and flavorful dish that you can prepare at home. Whether you’re cooking for family, friends, or just treating yourself, this recipe will surely impress.
Serving for 3-4 persons.
🔪 Ingredients You’ll Need:
Chicken Marination:
Chicken 1 kg
Corinder powder (Dhanya powder) 1 1/2 tbsp
Cumin powder (Zeera powder ) 3/4 tbsp
Salt (namak) 1/2 tbsp or as required
Mixed spice powder (garam masala powder) 1/2 tbsp
Red chilli powder (Laal mirch powder) 1/2 tbsp
Turmeric powder (haldi) 1/2 tsp
Biryani masala 2 tbsp
Corinder (dhanya) 3 tbsp
Fried onions 2 tbsp
Yogurt (dahi) 3 tbsp
Eggs
(anday)
Garlic, ginger paste (Lahsan, Adrak & paste) 4-5 tbsp
Lemon juice (limon ka ras) 4-5 tbsp
Masala Preparation:
Oil 3/4 cup(Should be more than usual
to preserve further)
Onion (piyaz) 3 medium sized
Garlic, ginger & Green chilies paste (Lahsan, Adrak & Hari mirch paste) 1 tbsp
Black pepper (kaali mirch) 8-9
Black cardamom (bari elachi) 3-4
Cloves (long) 6-7
Curry leaves (tez pat) 2-3
Star anise (phul) 1-2
Cinnamon stick (darcheni) 1-2
Marinated Chicken
Salt (namak) as required
Tomatoes (Tamatar) 3 medium sized
Nigella seeds (kalonji) 1/2 tsp
Biryani masala 1 1/2 tbsp
Potatoes (alu) 3 medium sized [fried 80-90%]
Lemon juice (limon ka ras) 2-3 tbsp
Biryani masala 1 tbsp
Lemon juice (limon ka ras) 2-3 tbsp
Boil The Rice:
Water (pani) as required
Oil 1/4 cup Preserved oil from biryani
Vinegar (serka) 2 tbsp
Lemon juice (limon ka ras) 2 tbsp
Salt (namak) 1 1/2 tbsp or as required
Biryani masala 2-3 tbsp
Black pepper (kaali mirch) 3-4
Black cardamom (bari elachi) 1-2
Cloves (long) 3-4
Star anise (phul) 1-2
Cinnamon stick (darcheni) 1-2
Rice (chawal) [soaked 2 hrs] 3 cups
Layering:
Oil 1-2 tbsp
Biryani masala
1/2 Chawal [repeat]
Yellow food colour
Red food colour
Fried onions 2-3 tbsp
Corinder (dhanya) 2-3 tbsp
Mint (Pudina) 2-3 tbsp
🔥 Step-by-step instructions:
Step 1: Chicken Marination
Take 1 kg chicken in a large bowl.
Add:
Coriander powder
Cumin powder
Salt
Garam masala powder
Red chilli powder
Turmeric powder
Biryani masala
Add:
Fresh coriander
Fried onions
Yogurt
Eggs
Ginger–garlic paste
Lemon juice
Mix everything very well until the chicken is fully coated.
Cover and marinate for at least 1 hour
If u wanna freeze , freeze for later use
(Best taste: 1 hour or overnight in fridge).
Step 2: Masala Preparation
Heat ¾ cup oil in a deep pot (keep flame medium).
Add sliced 3 medium onions and fry until golden brown.
Add ginger, garlic & green chilli paste, sauté for 4-5 minutes .
Add whole spices:
Black pepper
Black cardamom
Cloves
Curry leaves
Star anise
Cinnamon sticks
Fry for 4-5 minutes .
Add marinated chicken, mix well.
Cook on medium flame until chicken changes color and releases oil.
Add Salt (as required) chopped tomatoes, cook until soft and oil separates.
Nigella seeds,Biryani masala
Add 80–90% fried potatoes, mix gently.do bhunai very well
Add lemon juice and cook and do bhuna very very well
And separate the oil for boil the rice
Boil the Rice
In a large pot, boil water as required.
Add:
Preserved biryani oil
Vinegar
Lemon juice
Salt
Biryani masala
Black pepper
Black cardamom
Cloves
Star anise
Cinnamon sticks
Add soaked rice (3 cups).
Boil until rice is 70–80% cooked.
Drain rice and keep aside.
Layering the Biryani
Grease the pot with 1–2 tbsp oil.
Add a layer of chicken masala.
Add ½ layer of rice.
Sprinkle:
Biryani masala
Yellow & red food color
Fried onions
Fresh coriander
Mint
Repeat layers again (chicken → rice → toppings).
Cover tightly.
Step 5: Dum (Final Cooking)
Place pot on low flame.
Cook on dum for 15–20 minutes.
Turn off flame and rest for 10 minutes.
Gently mix and serve hot.
