ITALIAN TIRAMISU | SAVOIARDI RECIPE | Without Raw Chicken Eggs| Best recipe + Version for kids

Hi,
This is one of my favourite desserts. I will never say no to Tiramisu 😊!
But! I don't use the raw chicken eggs for cream! I'm afraid of raw eggs!
The cream is soft and fluffy without eggs.
I bake homemade Savoiardi (sponge fingers or Ladyfingers).
ALL INGREDIENTS:
◻️ SAVOIARDI (Sponge fingers/ Ladyfingers)
▫️4 eggs (separated)
▫️120 g icing sugar
▫️120 g flour
▫️1 tbsp cornstarch
▫️1 tsp vanilla extract
◻️MASCARPONE CREAM
▫️200-250 ml cold heavy whipping cream
▫️450-500 g mascarpone
▫️100 g sugar
◻️Strong coffee or Fresh orange juice
INSTRUCTIONS:
STEP 1. SAVOIARDI.
1. Preheat the oven to 190 C (375 F).
2. Separate 4 eggs. I use the "shell to shell method".
3. Add a pinch of salt to the egg whites (so they will beat better).
4. Beat the egg whites until the soft peaks, then add 60 g icing sugar and beat until stiff for 4-5 min.
5. In another bowl beat 4 egg yolks with 60 g icing sugar and 1 tsp vanilla sugar. Beat until pale and fluffy.
6. Add the egg yolks to the egg whites and mix gently using a spatula.
7. Sift flour and cornstarch over the egg mixture. Gently fold everything together until combined.
8. Using a pastry bag pip out onto the baking sheet (leave space between cookies).
9. Sprinkle with powdered sugar and bake it for about 12-15 min.
Remove from the oven and let them cool completely.
STEP 2. PREPARING THE CREAM.
I don't use raw chicken eggs for cream.
1. Beat cold heavy cream until stiff peaks form.
2. In another bowl mix mascarpone with sugar. Beat a little.
3. Using a spatula gently fold the whipping cream into the mascarpone mixture.
STEP 3. TIRAMISU.
Dip each side of the savoiardi in the coffee, then place them into the bottom of a dish to create a layer.
Pipe a layer of mascarpone cream. Then place another layer of coffee-dipper savoiardi (sponge fingers) over the cream, and pipe the second layer of cream.
Chill for at last 3-4 hours in the fridge. (or overnight)
Dust with cocoa powder.
For my kids I use fresh orange juice instead of coffee.
