Low Carb & Sugar Free Blueberry Pie:
Ingredients-
Pie Crust:
1 cup of unsalted butter melted and cooled
4 large eggs
½ teaspoon sea salt
¾ cup coconut flour
¾ cup almond flour
¼ teaspoon of baking powder
1 tablespoon of water
Pie Filling:
2 tablespoons arrowroot powder
1/2 cup sugar substitute
2-3 cups fresh or frozen blueberries
1/2 cup water
1 teaspoon lemon juice
Directions-
Pie Crust:
1. Combine all dry ingredients
2. Add wet ingredients to the dry (you might need to add a tiny bit more almond flour to form the dough)
3. Set dough off to the side
4. Take 1/2 of the dough and press it into a pie pan that has been sprayed with cooking oil
5. Put pie pan in fridge to chill
6. Take two silicone mats and wipe them with water to prevent the dough from sticking to it.
7. Roll out remain dough between the prepped silicone mats
