Welcome back to Osama Jalali’s Food World! Today, I am sharing my authentic Mutton Chapli Kebab recipe, prepared in true Peshawari street style. These kebabs are crispy, juicy, and bursting with traditional flavors that make them one of the most loved dishes of Pakistan and North India.
This recipe uses finely minced mutton, kidney fat, freshly ground spices, onions, tomatoes, and a unique omelet twist, giving the kebabs a smoky, rich, and irresistible flavor – just like the ones from the streets of Peshawar.

📌 Ingredients for Mutton Chapli Kebab:
Mutton Mince – 1 kg
Kidney Fat – 200 g
Salt – to taste
Coriander Seeds – 3 tbsp
Cumin Seeds – 1.5 tbsp
Black Pepper – 0.5 tbsp
Chapli Masala – 3 tbsp
Chili Flakes – 1 tbsp
Anar Dana – 1 tbsp
Chaat Masala – 1 tbsp
Roasted Chana Powder – 1 tbsp
Onions (chopped) – 3 pcs
Tomatoes (chopped) – 2 pcs
Green Chilies – 2 pcs
Fresh Coriander – 10 strands
Omelet – 2 eggs
Ginger Garlic Paste – 1 tbsp
Oil – for frying
👨🍳 Method (Step by Step):
Mince the mutton finely using the smallest setting.
Massage the mince with salt for 10–15 minutes.
Coarsely grind coriander, cumin, and black pepper.
Add spices, masala, and seasonings to the mince.
Chop onions, squeeze excess water, and mix in.
Add tomatoes, green chilies, and chopped omelet.
Add ginger garlic paste and massage for 10 minutes.
Heat oil/ghee in a flat pan.
Shape patties and fry on high heat for 5 minutes on each side.
Serve hot with naan, raita, and salad.
