Ingredients:
250 gms of thinly sliced brinjal
2 tbsp of Mustard Seeds
Vinegar
1 cup of mustard oil
4 chillies
8 cloves of garlic
Inch of Ginger
1tsp of pepper
½ tsp of turmeric
1 tsp of cumin powder
2 tsp of chilli powder
1tbsp of sugar
cup of vinegar
Method:
Marinate the thinly sliced brinjal with salt & keep it for one hour and drain the excess water
Crush the mustard seeds and add vinegar to it.
In a pan, heat the oil and add brinjals to fry them until they turn golden color
Take them out from the pan and in the same oil add chillies, garlic and ginger
Add the crushed mustard in the pan to which add pepper, turmeric, cumin powder and chilli powder mix them all well and add sugar and vinegar and add the Brinjal
Add salt as required.Let the pickle simmer for 5 minutes and let it cool for an hour
