Island Noodle Salad
I have always loved a good Asian noodle salad. It’s hard to find a really good recipe that really satisfies my palate.
This salad though reminds me of my roots. It reminds me of not just Guam, but my little vacations in Hawaii. So much flavor and goodness - I even found a local restaurant in Texas that truly comes close to this wholesome recipe.
Try this island inspired noodle salad that is a mixture of zingy sesame ginger marinated noodles, a combination of fresh vegetables, tortilla strips and almonds. Drizzle homemade dressing, add creamy peanut sauce and top with your protein of choice.

Yield : 2 servings, more or less
Ingredients
linguine noodles, al dente
salad, spring mix
grilled chicken breasts, cut into strips
zucchini, cut into ribbons
red bell pepper, sliced
cilantro, chopped
red onions, sliced
jalapeños, sliced
tortilla strips
toasted almonds, sliced
cooked shrimp, peeled and deveined
Dressing
3/4 cup olive oil
3 tablespoons rice wine vinegar
1 tablespoon sesame oil
salt + pepper, to taste
2 tablespoons ginger, finely chopped
*2 tablespoons peanut sauce - optional
✨Directions
Bring a pot of water to a boil and cook linguine noodles according to package - usually around 10 minutes or so. Cook until al dente. Once cooked - drain to stop the cooking and rinse under cold water. Set to the side.
In a small pan on medium - high heat, sauté shrimp for 2 - 3 minutes on each side. You can also skip this part and use precooked shrimp. Once cooked, set to the side.
While the water is boiling or after the noodles have been set to the side, prep the vegetables.
Add the noodles to a serving bowl. Layer the veggies, tortilla strips, almonds and protein on top of the noodles. Pour dressing over the salad. Serve the peanut sauce on the side for a pinch of creaminess. Enjoy as is or toss to combine.
If you don’t prefer peanut dressing, add a tablespoon of brown sugar to the salad dressing and continue to mix to combine.
Serve cold or at room temperature. Enjoy!
✨Helpful tips
•Vegetables and protein in this recipe are flexible. Add more or less, substitute - it’s so versatile!
•Use your favorite peanut sauce or make your own. For convenience, I used House of Tsangs Dipping Bangkok Peanut Sauce. You can find this at most grocery stores.
•The homemade sesame ginger dressing and the peanut sauce compliment each other. If you don’t care for peanut sauce, add a tablespoon of brown sugar to the dressing. This will balance out the flavors. Don’t care for sweetness? Enjoy as is.
•To stay crisp, the veggies should always be on top of the noodles.
•You can add the dressing to the noodles and allow to marinate or simply drizzle once the salad is complete.
