Asparagus & Spinach Pie with Cheddar & Dijon
Crust Ingredients:
• 300 g (about 2½ cups) all-purpose flour
• 180 g (about ¾ cup + 1 tbsp) cold butter, cubed
• 2 eggs
• ½ tsp salt
• Pinch of nutmeg
Filling Ingredients:
• 10 green asparagus spears, chopped
• A handful of spinach, chopped (about 1 cup, loosely packed)
• 200 g (about 1⅓ cups) cheddar cheese, cut into small cubes
• 300 g (about 1¼ cups) Greek yogurt
• 4 eggs
• 1 tsp Dijon mustard
• Salt, pepper, and nutmeg to taste
Method:
1. Prepare the crust:
Combine all crust ingredients in a blender (or mix by hand) until a dough forms.
Wrap and chill in the freezer for 10-15 minutes.
2. Prep the vegetables:
While the dough chills, chop asparagus and spinach. Cut cheddar into small cubes.
3. Make the filling:
In a bowl, mix eggs, yogurt, Dijon mustard, salt, pepper, and a pinch of nutmeg.
4. Pre-bake the crust:
Roll the dough between two sheets of parchment paper, dusted with a little flour.
Transfer to a baking dish and press into the bottom and edges. Poke the base with a fork.
Bake at 380°F (190°C) for about 15 minutes, until slightly golden.
5. Assemble & bake:
Remove the crust from the oven. Spread the chopped veggies and cheese evenly on top.
Gently pour the egg mixture over the filling.
Bake for 30-40 minutes, until golden and set in the center.
6. Serve:
Let cool slightly before slicing. Tastes amazing warm or cold!
