Ingredients:
12 shiitake mushrooms
8 dried scallops
5 chicken drumsticks
1 shallot
3 cloves of garlic
1 small ginger
2 scallion
some leafy vegetables

Chicken marinate:
1/2 tsp sugar
1/4 tsp salt
1 tsp soy sauce
1/2 tbsp cornstarch
1 tsp shaoxing wine
1 tbsp oyster sauce
mushroom water (about 1.5 cups)
scallop water ( about 1.5 cups)
cornstarch slurry (ratio: 1 tsp cornstarch: 2 tsp water)

Mushroom marinate:
1/4 tsp sugar
1/6 tsp salt
1 tsp oil

5 件 雞鎚
1 個 紅蔥頭
3 瓣 蒜頭
1 小塊 薑
2 棵 蔥
少許 綠葉菜

雞醃料:
1/2 茶匙 糖
1/4 茶匙 鹽
1 茶匙 生抽
1/2 湯匙 粟粉
1 茶匙 紹興酒
1 湯匙 蠔油
冬菇水 (大概 1.5 碗)
瑤柱水 ( 大概 1.5 碗)
粟粉水 (比例: 1 茶匙 粟粉: 2 茶匙 清水)

冬菇醃料:
1/4 茶匙 糖
1/6 茶匙 鹽
1 茶匙 油
