🥔Potato Salad Recipe🥗
Ingredients: Red potatoes (3 lbs), salt for boiling, 5 Hard boiled eggs, 5-7 large stalks Celery - sliced medium thin, 4- 5 tbsp Fresh dill (1 bunch), 3 stalks Green onion (chopped), 3-4 tbsp Capers, salt & pepper to taste.
Dressing: 2 tbsp Lemon juice, 1 cup Mayonaise - start out with half cup and add more if needed, 1/4 cup sour cream, 1 tbsp Apple cider vinegar, 3-4 tbsp Mustard.
Equipment: 2 Large mixing bowls
Instructions:
Boil potatoes: Put potatoes in large pot. Fill pot with enough cold water to cover them by about an inch. Add salt to the water. Then bring the water to a rolling boil over high heat. Once boiling, reduce the heat to a simmer with medium heat. Simmer for 15-20 minutes. After 15 minutes, test the potatoes with the point of a knife. You want them to be tender but still firm enough to not be falling apart. Once they’ve reached this consistency, they’re done. Now, drain the potatoes and cool them off by running cold water over them. Once cooled, cut the potatoes into bit sized chunks.
Hard Boil Eggs: Place the eggs in a pot. Fill pot with enough cold water to cover them by about one to two inches. Place the pot over high heat and bring the water to a rolling boil. Once the water is boiling, cover the pot and let the eggs sit for 10-12 minutes. Then have a bowl of cold water with a little ice in it ready to go. Transfer the eggs into the icy cold water with a slotted or skimmer spoon (run under cold water before transferring to hasten the cooling). Allow to cool. Then peel your hard boiled eggs. Please refer to the video for both the "tap and roll" method and the "equator" method of peeling hard boiled eggs. Now we chop the eggs into bite sized chunks.
Preparing fresh dill: Wash and dry a bunch of dill. Lay it on a paper towel to dry. Carefully remove the woody stems and keep the dill fronds. Gather them into a bunch. Then finely mince the fresh dill. This opens up the flavor. Be sure hold a few fronds back for garnish.
Slice green onion medium thin. Slice celery medium thin as well.
Dressing: Into a large bowl, add avocado oil mayonnaise, apple cider vinegar, Lemon juice, and yellow mustard. Mix it thoroughly together until smooth. Then add fresh dill and mix it again.
Now, in a large bowl, add the potatoes, hard boiled eggs, celery, green onions, capers, and then the dressing. Then add Salt & pepper to taste. Carefully mix everything together until fully incorporated. Make sure not to pulverize the potatoes in the process. Now serve into bowls. On each serving, add a few dill fronds for presentation. Now you have the most delicious potato salad. Enjoy!
