This bar is a true labor of love, and a celebration of the quintessential Brazilian cocktail. One of the drinks I "grew up" on because my dad used to smuggle Brazilian limes back home to Montréal, where he would freeze them and break them out for "apéro" when we had dinner guests. A few years back I learned that the only way to make this fantastic cocktail more delicious is to use fresh cacao fruit pulp instead of lime. My first taste of this was in Bahia during this regional visit, and there are no words to do it justice.
Somehow the kick of this drink comes through in this beautiful bar, with an effervescence that leaves me tickled. I don't understand why cachaça tastes so different than, for example, a caribbean rum, but it makes Brazil's signature cocktail unique and memorable.
