RECIPE:

Omelette soufflée au parmesan

400 ml milk
60 g flour
Grated parmesan
6 egg yolks
8 egg whites

Mix flour with yolks.
Heat milk and add to yolks. Add parmesan and reduce.
Beat whites to stiff peaks and fold into yolk mixture.
Pour into deep non stick pan with a little melted butter. Start cooking on stove hen transfer to 400 F oven for 10 minutes.
