✿ Gillian's Almond Cookie Recipe ✿

200 grams Almond flour
120 grams Caster Sugar
2 Egg whites
40 grams Plain flour
Pinch of Lemon zest
1 tsp Almond extract

Add all of the dry ingredients, and almond extract, into a bowl and mix together, then add in the egg whites, a bit at a time, and stir by hand until a soft dough forms. Shape each cookie by hand into a small ball, and place each one on a lined baking tin. Bake in the oven at 170 degrees celsius for approx. 15-17 mins. Enjoy!
