Mother’s Day Brunch Ideas! Mini Quiches & Egg Bites!

Mother's Day is around the corner, which means that I'll be cooking up some of my brunch favorites. First on the menu are these Mini Quiches which also works as meal prep egg bites. They're delicious and easy to make. The perfect addition to any brunch or celebration.

Ingredients:
8 Eggs
½ cup Half & Half
1 tsp Dijon Mustard
⅛ tsp Fresh Grated Nutmeg
¼ tsp Kosher Salt
Black Pepper to taste
2 9in Pie Shells
1 tsp All Purpose Flour
½ cup Cheddar Cheese
2 Slices Canadian Bacon Diced
1 tsp Minced Green Bell Pepper
1 tsp Minced Red Bell Pepper
2 tsp Minced Yellow Onion
1 Minced Shallot
½ cup Grated Gruyere Cheese
3 Slices of Bacon Cooked & Diced
1 Cup Saute Spinach
1 tsp Minced White Onion
½ cup Feta Cheese
1 tbsp Butter
Minced chives for garnish
