SWEET Pork BBQ spare ribs in chunks is a hearty and flavourful dish that features tender pork ribs coated in a savoury sauce. The ribs are typically cut into bite-sized pieces, making them easy to eat and perfect for sharing with a group. The meat is first seasoned with a blend of spices, such as paprika, garlic powder, and brown sugar, before being slow-cooked until it's fall-off-the-bone tender.

The sauce is poured over the cooked pork spare rib chunks and then cooked in the oven until the sauce caramelizes and becomes sticky.

Sweet BBQ pork spare rib small chunks:
Ingredients:
2 lbs pork spare ribs
1/2 cup brown sugar
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup honey
1 tablespoon garlic powder
1 teaspoon smoked paprika
2 star anise
Salt and black pepper, to taste
Vegetable oil, for frying
Optional garnish: chopped green onions or sesame seeds
Instructions:
Preheat your oven to 325°F (160°C).
In a bowl, mix together the brown or caster sugar, soy sauce, ketchup, honey, garlic powder, smoked paprika, salt, and black pepper.
Add the pork spare rib chunks to the bowl and toss to coat evenly.
Heat a large skillet or wok over medium-high heat and add enough vegetable oil to cover the bottom of the pan.
Once the oil is hot, add the pork spare rib chunks in a single layer and fry for 10 minutes on each side.
(Set aside the remaining marinade mix for later.)
Add the star anise for more aromatic flavour halfway frying the spareribs.
Remove the pork spare rib chunks from the skillet and place them on a baking pan.
Pour the remaining marinade over the pork spare rib chunks, making sure to coat them evenly.
Bake the pork spare rib chunks in the preheated oven for 45- 1 hour or until the marinade has thickened and caramelized.
Remove the pork spare rib chunks from the oven and introduce back to the pan , drizzle with a little bit of the marinade sauce left from the frying and browning.
Fry the pork chunks until its more caramelised and sticky.
Optional: garnish with chopped green onions and sesame seeds.
